- Boil potatoes un-peeled in lightly salted water for up to 8 min, or possibly till tender.
- Drain and plunge potatoes into cool water to stop cooking process. Drain and cold. Cut cooled potatoes in half.
- In heavy skillet, heat butter. Over medium high heat, place potatoes, cut side down and cook till golden brown, about 3 min.
- Turn potatoes, and allow to heat through, about 3-4 min Lower heat, add in herbs, salt, white pepper and toss together.
- Serve immediately.
