Happy New Year! As we ring in the new year and celebrate #Sunday Supper month, we are sharing easy family recipes that our families love. I don’t know about anyone else in my family, but I absolutely love the idea of sheet pan meals! I love to cook but don’t love to clean up, and this sheet pan idea is genius. It’s quick, healthy and easy clean up.
This recipe is so easy, I don’t really consider it a recipe. You can use whatever vegetables you have on hand, toss them along with the chicken in oil, garlic and herbs of choice. Spread it out on a parchment lined pan and bake. It can’t get much better than that.
A baked potato on the side is the perfect addition to make this a filling and healthy meal.
NOTES & TIPS: If you prefer your veggies on the crisp side, cut the chicken into strips

Pan Roasted Chicken and Vegetables #SundaySupper Save Print Prep time Cook time Total time Author: Anne Serves: 4 Ingredients 1 pound boneless chicken breasts 2½ cups cauliflower florets 2 cups brussels sprouts 1 cup chopped broccoli 2 cloves crushed garlic 3 tablespoons olive oil juice of one lemon 1½ teaspoons basil Sprinkle of sea salt, pepper, and paprika Instructions place the vegetables in a bowl mix together the crushed garlic, basil, lemon and oil and set aside one tablespoon pour remainder of the mixture over the vegetables and combine arrange the vegetables on a baking sheet and top with chicken breasts spread the remainder of oil mixture over the chicken breasts sprinkle with salt,, pepper and paprika place in over and bake for 20 to 30 minutes Notes If you prefer your veggies on the crisp side, cut the chicken into strips This recipe is gluten free, has only 10 ingredients, and is low carb Nutrition Information Calories: 333 Fat: 21.1g Carbohydrates: 10.7 Sugar: 3g Sodium: 111mg Fiber: 4.1 Protein: 27.3g Wordpress Recipe Plugin by EasyRecipe 3.5.3226
