- In a large heavy skillet, fry bacon over medium heat till crisp. Remove skillet from heat, drain bacon on paper towels (leave drippings in skillet).
- Combine cornmeal, bake mix and chili pwdr on a plate. Roll each fish in cornmeal mix.
- Add in peanut oil to drippings in skillet. Heat over medium heat. Fry fish (two at a time), 5 to 6 min per side, till lightly browned and cooked through. Season to taste with salt and pepper. Crisscross 2 bacon slices over each fish, and serve with lemon wedges.
- This recipe yields 4 servings.
- Comments: Watch the bacon carefully, removing it as soon as its done, so the remaining fat in the pan (that you'll use to cook the fish) doesnt get a burnt flavor.
