  • 8 slc bacon
  • 1/2 c. stone-grnd cornmeal
  • 1/2 c. Atkins Bake Mix
  • 1 tsp chili pwdr
  • 4 whl trout gutted
  • 2 Tbsp. peanut oil
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Lemon wedges for serving

  1. In a large heavy skillet, fry bacon over medium heat till crisp. Remove skillet from heat, drain bacon on paper towels (leave drippings in skillet).
  2. Combine cornmeal, bake mix and chili pwdr on a plate. Roll each fish in cornmeal mix.
  3. Add in peanut oil to drippings in skillet. Heat over medium heat. Fry fish (two at a time), 5 to 6 min per side, till lightly browned and cooked through. Season to taste with salt and pepper. Crisscross 2 bacon slices over each fish, and serve with lemon wedges.
  4. This recipe yields 4 servings.
  5. Comments: Watch the bacon carefully, removing it as soon as its done, so the remaining fat in the pan (that you'll use to cook the fish) doesnt get a burnt flavor.
