- In a small bowl, whisk honey, 2 tablespoons of pineapple juice, ginger, and salt and pepper. Set aside.
- Cook rice according to package instructions. Set aside.
- Place oil in skillet over medium heat. Brown the pork cubes on all sides, about 10 minutes. Add diced bell pepper and pineapple chunks. Cook until peppers are tender and the pineapple is cooked. Remove from pan.
- Add the honey liquid mixture to the pan and bring to a simmer. Add pork and pineapples to liquid and coat well.
- Serve over rice with scallions and lime wedges.
