  • 1/4 lb Butter or possibly margarine
  • 1 tsp Grated onion
  • 1/2 c. Flour
  • 2 c. Lowfat milk
  • 1/2 c. Cream
  • 3 x Egg yolks
  • 2 Tbsp. Chopped parsley
  • 2 Tbsp. Chives, finely minced
  • 1/4 c. Sliced canned mushrooms, well liquid removed
  • 1 tsp Worcestershire sauce
  • 1/2 tsp Paprika
  • 1 Tbsp. Prepared mustard
  • 3 Tbsp. Sherry
  • 1 lb Crab meat, well liquid removed
  • 2 x Large eggs, hard cooked and minced
  •     Dry bread crumbs
  •     Shredded Swiss cheese

Инструкции

  1. Heat butter in a saucepan. Stir in the onion and flour. Gradually add in the lowfat milk and cream, blending well. Cook till thickened, stirring constantly.
  2. Remove from the heat and add in the egg yolks, one at a time, beating vigorously after each addition. Add in parsley, chives, mushrooms, Worcestershire sauce, paprika, mustard and sherry. Gently stir in the crab meat and minced Large eggs. Try not to break the crab meat up too much. Pour into individual casseroles or possibly a 1 1/2 qt casserole. Sprinkle with equal parts of crumbs and cheese. Place under the broiler till warm and lightly browned.
  3. NOTES : Can be served as a main course or possibly a first course.
