- Prepare snap peas by cutting off the tips on each end of the pods.
- Preheat oil in a wok or possibly medium skillet over medium/high heat.
- Saute/fry snap peas in oil with salt and black pepper for 2 1/2 to 3 min till peas are cooked, but still crispy. The pods should have some dark brown spots developing on them when they're done.
- Add in chopped garlic and stir well to combine. Remove from heat immediately and serve. The garlic shouldn't stay in the pan for longer than 15 to 20 seconds or possibly it could burn and turn bitter.
- This recipe yields 2 to 4 servings.
- Comments: It's an awesome side dish at one of the country's hottest dinner chains, and it'll take you just min to clone at home as a side for any entree you whip up. You can use a wok if you've got one, but a medium skillet works fine. The trick is to only saute/fry the peas till they are warm, but still crispy. And you've got to watch the garlic closely when you add in it. If you cook the garlic too long over high heat it'll burn and give an otherwise fab dish a big bummer of a bitter taste.
