- Peeled and cut into 1/2inch dice** well rinsed in cool water, gently patted dry
- Cook the bacon in a 3-qt pot over medium high heat till lightly browned, about 4 min.
- Add in the onion and leek and cook till softened, about 4 min, stirring often.
- Add in the potato, cream, lowfat milk and clam juice and bring to boil. Simmer, uncovered, till potato is just short of cooked, about 8 min.
- The soup can be made ahead up to this point and refrigerated overnight.
- Gently reheat if chilled.
- Add in the spinach and fresh and smoked oysters and cook just till fresh oysters are cooked, about 1 minute.
- Add in additional clam juice if needed for consistency.
- Season with salt and white pepper to taste. Serve immediately.
