Ингредиенты

  • 1 1/2 c. oil
  • 2 1/2 c. flour
  • 4 doz. oysters, minced with liquid
  • 1 1/2 bunch green onions
  • 4 stalks celery
  • 2 onions or possibly French scallions
  • 2 teaspoon anchovy paste
  • 1 teaspoon fennel
  • 2 T Worcestershire sauce
  • 1/2 c. fresh parsley
  • 3 (10 ounce) packages. frzn spinach, cooked
  • 3 quarts. chicken stock
  • Oyster water
  • 2 ounce Pernod
  • 6 drops Tabasco sauce
  • Salt & pepper to taste

  1. Mix oil and flour in large skillet and cook on low flame till golden and set aside. Stir roux constantly and don't let burn. Chop all greens. Saute green onions, celery, onions, 2 tbsp oil till tender. Add in anchovy paste and fennel. Stir and cook for 10 min. Add in chicken stock and simmer for 15 min. Take some chicken broth/stock and add in to roux to make it thinner. Add in this to vegetables. Add in parsley, Worcestershire sauce, oysters and water. Drain spinach thoroughly and add in to mix. Simmer for 30 min. Add in Tabasco, Pernod, salt and pepper to taste.
