  • 20 x oyster
  • 8 x egg, separated, whites, only
  • 4 c. yellow cornmeal
  • 4 c. two percent lowfat milk
  • 1 c. canola oil
  • 1 x scallion, thinly, sliced
  •     salt
  •     pepper
  • 2 c. vegetable oil

  1. To make the batter, whip the egg whites with a hand beater till stiff peaks form. In a bowl, mix the lowfat milk, the cornmeal, the oil and the scallions. Season with salt and pepper. It should look like pancake batter. Mix in the egg whites.
  2. In the meantime, put 2 c. of vegetable oil in a deep saucepan and bring the temperature up to 400 degrees over a high heat. Use a kitchen thermometer to measure the temperature. Dredge the oyster in flour and then in the batter. Fry for 3 min. Remove the oysters from the oil using a slotted spoon and drain them on paper towels.
  3. Season with salt and serve on a bed of caramelized vidalia onions, fleur de sel and sea asparagus.
