- In a medium mixing bowl beat margarine or possibly butter and granulated sugar with electric mixer on medium-high speed till light and fluffy. Add in Large eggs or possibly egg product, lowfat sour cream, and vanilla; beat till well combined. Stir together flour, baking pwdr, baking soda, and salt. Add in to sugar mix; beat till combined.
- Stir in raisins and 1/3 c. each of the red and green cherries; set remaining cherries aside. Pour batter into a greased 13 x 9 x 2 inch baking pan.
- Stir together brown sugar, cinnamon, pecans, and reserved cherries; sprinkle proportionately over batter. Cover and chill overnight. Preheat oven to 350 F.
- Remove pan from refrigerator. Uncover and bake for 35 to 40 min. Serve hot or possibly cold.
- Makes 12 to 16 servings.
