  • 2/3 c. margarine or possibly butter
  • 1 c. granulated sugar
  • 2 x Large eggs or possibly 1/2 c. frzn egg product, thawed
  • 1 x (8-ounce.) container dairy lowfat sour cream
  • 1 tsp vanilla
  • 2 c. all-purpose flour
  • 1 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 c. raisins
  • 1/2 c. red candied cherries, minced
  • 1/2 c. green candied cherries, minced
  • 1/2 c. packed brown sugar
  • 1/2 tsp grnd cinnamon
  • 1/2 c. minced pecans

  1. In a medium mixing bowl beat margarine or possibly butter and granulated sugar with electric mixer on medium-high speed till light and fluffy. Add in Large eggs or possibly egg product, lowfat sour cream, and vanilla; beat till well combined. Stir together flour, baking pwdr, baking soda, and salt. Add in to sugar mix; beat till combined.
  2. Stir in raisins and 1/3 c. each of the red and green cherries; set remaining cherries aside. Pour batter into a greased 13 x 9 x 2 inch baking pan.
  3. Stir together brown sugar, cinnamon, pecans, and reserved cherries; sprinkle proportionately over batter. Cover and chill overnight. Preheat oven to 350 F.
  4. Remove pan from refrigerator. Uncover and bake for 35 to 40 min. Serve hot or possibly cold.
  5. Makes 12 to 16 servings.
