Overnight oats are a great alternative to pre-packaged oats for quick and healthy breakfast. Make up a big batch of them early in the week, mix in a variety of fruits nuts and flavors, and you have a ready to go breakfast for three days.

It’s recipe redux time once again and this month’s theme is – Break Out of Breakfast Boredom . . . “Cooks aren’t always pressed for time in the mornings – they just need new ideas. Think mug cakes, smoothie bowls, breakfast cookies and more. Show us the healthy way you wake up your breakfast – or wake up just for breakfast!”

Breakfast is the most important meal of the day and the only meal that I don’t get excited about cooking. Maybe it’s because I’m just too hungry in the morning. I don’t want to think about what I’m going to make, I want to eat and go about my day. Needless to say, even when I’m not pressed for time, I welcome a ready to go breakfast.

Overnight oats are not a new idea, but with the endless possibilities of mix ins, they are anything but boring. I like to make a big batch of plain oats and divide them into individual serving sized jars with different add-ins. This recipe is a little more like chia pudding meets oatmeal with a few simple ingredients (oatmeal, chia seeds, almond butter and water). This week I added Banana and dates. . .

Frozen berries with a splash of honey. . .

and cinnamon with walnuts and maple syrup.

Three days of different ready to go breakfasts that are loaded with fiber and nutrients.

For banana recipe: ½ mashed banana 1 date chopped For berry recipe ¼ cup frozen or fresh berries and 1 teaspoon honey For maple walnut version 1½ teaspoons cinnamon, 1½ teaspoons maple syrup 2 tablespoons chopped walnuts Instructions

place first four ingredients into a bowl and mix well divide mixture into three individual serving sized containers place desired add ins to each container Serve cold or heated 3.5.3208
