  • 1/2 lb Bacon
  • 3 x Large eggs
  • 1 med -sized head Iceberg Lettuce
  • 1/2 c. sliced Spring Onions
  • 1 c. thinly sliced Celery
  • 1 x (8-ounce.) can sliced Water Chestnuts
  • 1 x (10-ounce.) pkg. frzn Peas
  • 2 c. Mayonnaise
  • 1 x clove Garlic
  • 2 tsp Sugar
  • 1 tsp seasoned Salt
  • 1/2 c. grated Parmesan Cheese
  • 24 x Cherry Tomatoes

  1. Cook bacon till crisp; drain, allow to cold, and crumble or possibly chop. Set aside.
  2. From cool-water start, bring Large eggs just to the boil; set aside off the heat for 20 min to "hard cook." When cold, remove shells; chop and chill.
  3. Shred the lettuce, and spread over the bottom of a wide, straight-sided glass bowl.
  4. Slice onions in small pcs, and sprinkle over lettuce. Drain water chestnuts (making sure they're sliced into bite-sized pcs); reserve a few pcs, and sprinkle the rest over the onions.
  5. Open the package of still-frzn green peas; arrange in an even layer over the rest of the greens. Measure mayonnaise into a medium- to large-sized mixing bowl. Press clove of garlic into mayo; add in sugar, salt, and cheese. Mix gently and carefully spreadover peas. Just before serving, halve the cherry tomatoes and arrange around the edges of the salad bowl. Make smaller concentric circles with the Large eggs, bacon, and reserved water chestnuts. Serve with a large spoon, or possibly perhaps both a spoon and a fork, so everyone can scoop out some of all the layers.
