I am a huge fan of fruit salads.
In fact, I have never tasted a fruit salad I didn't like.
Fruit salads are versatile, easy to prepare and
when fresh fruit is in season, nothing else compares.
Fruit salads are always a hit at picnic's and gatherings...so

What makes this fruit salad so tasty is
while this salad sits in the refrigerator overnight
the mini marshmallows get nice and soft.
It's almost like they melt into the whipped topping
pudding mixture.

Note:
Before making this fruit salad,
the canned fruit in this recipe needs to be completely dry.
Start this salad 2 days in advance..
Draining the fruit overnight in the refrigerator the first day
- 1- 20 oz can pineapple chunks, well drained
- 1- 15 oz can mandarin oranges, drained
- 1- 15 oz can pitted dark sweet cherries, drained
- 1- 15 oz can sliced peaches, diced and drained
- 1- 15 oz can fruit cocktail, drained
- 1 (3 oz) box instant vanilla or lemon pudding mix
- 1 1/4 cups milk*
- 2 cups cool-whip whipped topping, thawed
- 10 oz bag mini marshmallows
- Optional:
- 1-1/2 cups sweetened flaked coconut
- 1/2 cup toasted pecans
- Place all fruit in a large colander,
set over a large bowl.
Drain fruit in the refrigerator overnight.
Discard juices or pour in a small freezer proof container
Store in the freezer and use in other recipes.
Follow directions on package of pudding mix
Using 1 1/4 cups milk
Whisk until thick
Fold in the cool whip
Gently fold drained fruits and
Mini marshmallows into the pudding/whipped topping mixture
Add coconut and pecans if using
Refrigerate overnight
*Add multi-colored mini marshmallows for a fun twist
*The amount of milk depends on how thick you want your fruit salad.
