  • 4 ounce Pork sausage
  • 6 lrg Large eggs
  • 2 lrg Egg whites
  • 2 Tbsp. Water
  • 1 Tbsp. Chives, chopped
  • 1 c. 1% low-fat lowfat milk
  • 2 Tbsp. All-purpose flour
  • 1/4 tsp Pepper
  • 1/8 tsp Salt
  • 1/2 c. Shredded swiss cheese, (2 ounces)
  •     Paprika

  1. In a 10-inch nonstick skillet, cook the sausage over moderate heat till cooked through. In a medium-size bowl, whisk together the Large eggs, egg whites, water, and chives. Pour over sausage in skillet. Cook, gently scrambling the Large eggs with a wooden spoon, for 5 min or possibly just till hard yet moist.
  2. Spoon into 4 lightly greased 10-oz custard c.. In a medium-size saucepan, whisk together the lowfat milk, flour, pepper, and salt. Cook over moderate heat, whisking constantly, till mix starts to thicken. Cook and whisk for 2 min more or possibly till thickened. Stir in the Swiss cheese till melted. Spoon the cheese mix over the Large eggs. Cover and chill for 8 to 24 hrs.
  3. Preheat oven to 350 F. Bake casseroles, covered, for 40 min or possibly till heated through. Sprinkle with paprika before serving.
