I love asparagus! This time of year is the perfect time for all the asparagus you can eat. It’s delicious and so nutritious! I normally get it for about $1.99 a pound or sometimes less! I love to explore a ton of asparagus recipes because normally you can’t go wrong.
This recipe is delicious! I love roasted asparagus because roasting it brings out this amazing nutty flavor that I love. This recipe really does enhance the asparagus flavor.
Ingredients:
- 2 lbs asparagus (remove woody)
- 2 tablespoons olive oil
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon fresh ground black pepper
Directions:
Preheat oven at 425 degrees. Cut off the woody ends of the asparagus and discard
Place the asparagus in shallow baking dish.
Drizzle with 2 Tablespoons of olive oil the add salt and pepper.
Then roast for 15 minutes. You will want to keep an eye on the asparagus so that it does not overcook or burn. Keep in mind that the cooking time will vary based on the thickness of the asparagus.
