Asparagus is in season and will be through the end of May. Not only is it delicious, it is loaded with vitamins, nutrients and has many anti-inflammatory properties. It can be eaten raw, or cooked in a variety of ways; steamed, boiled, roasted, or grilled. When choosing asparagus look for the stalks that do not have dry or split ends and they should tight tips such as the ones pictured above. Asparagus can be stored in the fridge in a produce bag for up to three days. When it’s time to prepare the asparagus, clean it well to remove the dirt and grit that can collect in the tips and gills. This can be done by rinsing it well under running water or soak for about 30 minutes in a bowl of water. Rather than cutting the tough portion off of the stalks, snap off the bottom inch or so with your fingers; it will naturally break leaving you with the most tender portion of the asparagus. Oven Roasted Asparagus
INGREDIENTS
- 1 Pound fresh asparagus, cleaned and trimmed
- 1 Tablespoon of extra virgin olive oil
- 1 Tablespoon of Nutritional Yeast or Grated Parmesan CheeseINSTRUCTIONS
- Line baking sheet with parchment paper
- Spread out the cleaned asparagus on the parchment paper
- Drizzle the olive oil over the asparagus and "roll" the asparagus around on pan so they are coated with oil
- Roast in 425 degree oven for approx 15 minutes
- Remove and sprinkle with nutritional yeast or cheese
- Roast for 5 more miniutes
