Orzo Stuffed Peppers

This hearty Italian meal stretches a pound of ground beef (or turkey) into a delicious dinner for six. It is fast and easy to put together but perfect to serve to guests. You can use any color pepper but I like to mix them up, it makes for a pretty presentation!

Ингредиенты

  • 3 large green, yellow, orange or red peppers.
  • 1 pound lean ground beef
  • 1 cup uncooked orzo
  • 1 cup packed spinach leaves
  • 1 egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 jar low salt marinara sauce, about 20 oz.

  1. Wash and coarsely chop spinach and place it in the bottom of a colander.
  2. Cook orzo according to package directions in boiling water until tender.
  3. When orzo is tender pour into colander with the spinach to drain. This will drain the orzo and wilt the spinach.
  4. Cool the orzo/spinach mixture to room temperature.
  5. In a large bowl combine beef, salt, pepper, Italian seasoning and egg until will mixed.
  6. Mix in spinach and orzo.
  7. Slice the peppers in half from stem to bottom. I don't remove the stems. Scoop out seeds and ribs.
  8. Pour most of the marinara sauce in the bottom of a 9"x13" baking pan.
  9. Stuff the peppers with the meat/orzo filling and place in the baking pan.
  10. Pour the remaining sauce over the top of the peppers.
  11. Bake in a preheated 350 degree oven for 45 minutes.
  12. Serve piping hot with a green salad and crusty bread to sop up the sauce.
