  • 11 lb broccoli rabe
  • 3 pints olive oil
  • 3 lb onions, minced
  • 3 lbs tomato paste
  • 6 lbs Italian sausage, bulk or removed
  • 12 lbs orecchiette pasta, dry
  • 10 lbs garlic cloves, sliced
  • 5 tsp red pepper flakes
  • 5 fl oz chicken stock or water
  • 1 oz parsley, chopped
  • 1 oz basil chiffonade
  • 1 oz oregano, chopped
  • 1 oz chives, minced
  • 2 lbs parmesan, grated

  1. Clean the broccoli rabe by cutting off 1 inch/25 mm from the bottom of each stem. Blanch the broccoli rabe in boiling salted water until 90 percent cooked, about 4 minutes. Remove and shock in an ice water bath. Drain and set aside.
  2. In large saute pan or rondeau, heat 1 cup/240 ml of the olive oil over medium heat. Add the onions and cook until tender, about 4 minutes. Add the tomato paste and sausage. Crumble the sausage with a whisk in the pan. Let the mixture cook until the sausage resembles a Bolognese-style sauce, about 5 minutes. Remove from heat and reserve.
  3. Bring a large pot of salted water to a rolling boil. Add the pasta and boil until it is tender to the bite but still retains some texture, about 6 minutes (cooking time may vary by brand; follow package directions). Drain pasta in a colander.
  4. While the pasta is cooking, heat a large saute pan or rondeau over medium heat and add the remaining oil. Add the garlic, red pepper, stock or water, and reserved sausage mixture. Cook, stirring to combine, for about 1 minute. Add the parsely, basil, oregano, chives, and broccoli rabe and cook until the broccoli rabe is very hot, about 3 minutes. Add the cooked pasta and 15 oz/425 g of the cheese and toss to mix.
  5. Serve 6-oz/170-g portions of pasta on heated plates, garnished with the remaining cheese.
