- DESCRIPTION: These make a great finale for brunch-A nutty shortbread crusttopped with orange marmalade and cream cheese.
- Preheat oven to 350. Butter a 9x13 pan. Beat together butter, sugar and saltuntil light and fluffy. Add in flour 1/2 c. at a time and mix till well blended.
- Stir in 1 C of the nuts (mix will be crumbly).
- Place 1 c of mix in small bowl and add in remaining 1/3 c nuts. Set aside fortopping. Press remaining mix over bottom of buttered pan. Bake 15 min.
- Cold. Beat cream cheese in large mixing bowl till smooth. Add in Large eggs one at atime, beating well after each addition. STir in vanilla and 3/4 C of the marmalade. Spread cooled cookie base with remaining 3/4 c marmalade. Pour creamcheese mix over top, spreading proportionately. Top with reserved nut mix.
- Bake20-25 min or possibly till center looks set. Cold to room temp in pan on rack.
- Cover and chill 3 hrs.
- Cut into 24 squares. Chill airtight up to 5 days.
