Orange-Ginger Pork Rib Roast -Toaster-Oven Style

If you face west in my kitchen you’ll be looking at the stove. To the east is the microwave. In between, to the north, is the toaster-oven. Why am I giving you directions around my kitchen? Probably because the song “Stand” by R.E.M came on the radio while I was preparing this dish. In the song Michael Stipe sings, "stand in the place where you live" (which I was) then he suggests you turn in different directions (which I did). I do as Michael Stipe says. Once I was facing the toaster-oven I figured it had to be a more environmentally-friendly way to cook a small 2 lb roast compared to using the energy-sucking oven.

I marinated the roast in an orange-ginger rib sauce for about 2 hours then cooked it in the toaster-oven at 325º F for about 1 hour. I reserved the marinade and reduced it over high-heat in a small saucepan to make a sauce. To my surprise it was one of the best pork rib roasts I’ve ever cooked! And environmentally-friendly too! At least I think it was. David Suzuki if you are reading this let me know if I’ve made you proud.

By the way if you’re new to cooking roasts don’t let them then scare you. They’re about the easiest thing to cook if you use a meat thermometer (digital ones work well). The thermometer does all the work by letting you know when the meat hits the desired temperature (160º F in this case). Once you hit the mark remove your roast from the oven (or toaster-oven), cover it with foil and let it "stand" for a few minutes on a rack. Top it with an easy-to-make sauce, like the one I made, and you have yourself a delicious dish! How sweet is that?

In a medium bowl, whisk together orange juice, hoisin sauce, soy sauce, jam, honey, garlic, ginger, Worcestershire sauce, vinegar, sesame oil, Tabasco sauce and pepper.

Place pork in a large resealable plastic bag. Add marinade. Seal bag and turn several times until pork is coated with marinade. Marinate in the refrigerator for 2 to 3 hours

Place pork on a small rack on top of a baking sheet lined with foil (reserve marinade). Bake in a 325º F oven (or toaster-oven) for 1 hour or until internal temperature of the meat hits 160º F. Remove from oven, cover with foil and let stand for 5 minutes.

Pour reserved marinade into a small saucepan. Heat the saucepan over medium-high heat. Cook, stirring occasionally, until sauce reduces and slightly thickens to coat the back of a spoon, about 8 to 10 minutes. Spoon sauce over pork and serve.
