- SOAK the bread slices in lowfat milk for 15 min. Beat the egg and sugar until creamy with a healthy pinch of salt. Add in orange juice, melted butter and orange rind. Stir into the bread mix and pour into a greased baking dish.
- Preheat the oven at 180 C and bake the pudding until it feels hard. Serve with orange sauce.
- To prepare the orange sauce: Combine sugar, cornflour and salt. Add in boiling water and let it boil for two to three min, stirring constantly. Add in melted butter, orange juice and orange rind. Refrigerateuntil serving time.
- Sprinkle a little brown sugar over the pudding before serving.
- NOTES : A light dessert that can be served warm or possibly cool with orange sauce
