Рецепт Orange Blueberry Streusel Muffins
I feel a little bit like I am living in the twilight zone. People have been sick for so long around here that I don't remember what it's like to be on a normal schedule. I've totally lost my groove, and I feel kinda like I'm wandering around aimlessly. My kitchen still isn't painted. Heck, I still haven't finished the war on the wallpaper. My living room isn't decorated. I'm doing a boutique this weekend and I don't even know if I'll be able to get enough stuff together. I haven't been grocery shopping in ages. And I won't even mention the state my house is in. Yikes!
Since I don't have the time or the mental state to come up with anything creative and amazing, I'm sharing a recipe I've had in my archive for awhile. I think I combined a couple recipes to come up with it, but I honestly can't remember exactly. I do remember that we loved them. The orange and blueberry are a great combination, and the crumb topping makes them even more special. Hope you enjoy them!
Orange Blueberry Streusel Muffins
- 2 1/4 cups flour
- 1 1/4 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 3/4 cup sugar
- 1/3 cup orange juice
- 1/4 cup oil
- 1 tsp vanilla
- 1 cup plain yogurt or sour cream
- 1 egg
- zest of 1 orange (reserve a little for the streusel)
- 1 1/2 cups blueberries
- Streusel:
- 3 Tbsp sugar
- 2 Tbsp flour
- 1 1/2 Tbsp butter
- 1/4-1/2 tsp orange zest
- 2 Tbsp sliced almonds, chopped (optional)
Combine flour, baking powder, soda, salt, and sugar in large mixing bowl and set aside. In a smaller bowl, whisk orange juice, oil, vanilla, yogurt, egg, and orange zest till well combined. Stir gently into dry ingredients. Fold in berries. Spoon into well greased or paper lined muffin cups. Combine all streusel ingredients till crumbly, then sprinkle over muffins. Bake at 350° for about 18 minutes.

-I forgot to write it down, but I think it made about 2 dozen.
