- Â Â Grated zest of 1 orange
- 1/3 c. Fresh orange juice
- 2 Tbsp. Fresh lime juice
- 1 x Chipotle chili in adobo sauce, chopped
- 1 lrg Clove garlic, peeled and chopped
- 1Â 1/2 lb Snapper, flounder or possibly other lean, white fish fillet, cut into 4 serving pcs
- 1/8 tsp Salt

- Combine the orange peel, orange juice, lime juice, chili and garlic in glass pan. Add in fish, cover and chill 1 hour.
- Preheat oven to 450 degrees. Throw away marinade and arrange fish on baking sheet. Sprinkle lightly with salt and bake 10 min per inch of thickness, till just cooked through.
- Makes 4 servings.
