%20shoulder%20of%20lamb.%3C/p%3E%3Cp%3EThe%20lamb%20shoulder%20on%20top%20of%20the%20vegetables.%20You%20often%20need%20to%20cut%20something%20off%20to%20squeeze%20it%20all%20in,%20in%20this%20case%20I%20took%20off%20the%20protruding%20leg%20and%20tucked%20it%20in%20the%20side.%3C/p%3E%3Cp%3EIt's%20a%20lazy%20man's%20lunch%20really,%20as%20you%20don't%20need%20to%20do%20much,%20but%20it%20is%20worth%20checking%20after%20a%20couple%20of%20hours%20just%20to%20make%20sure%20it's%20not%20burning%20underneath.%20It%20will%20depend%20how%20well%20covered%20the%20vegetables%20are,%20and%20what%20type%20of%20course,%20but%20if%20it's%20getting%20too%20dry%20just%20pour%20in%20some%20more%20liquid,%20anything%20from%20stock,%20wine%20or%20just%20plain%20old%20water%20will%20do.%20This%20one%20actually%20turned%20out%20very%20juicy,%20a%20quality%20of%20the%20lamb%20itself%20I%20guess%20as%20there%20wasn't%20much%20in%20the%20way%20of%20vegetables%20to%20speak%20of.%3C/p%3E%3Cp%3EThe%20meat%20out%20of%20the%20oven,%20nicely%20browned,%20but%20very%20tender%20and%20moist%20still.%3C/p%3E%3Cp%3EOne%20nice%20by%20product%20of%20this%20technique%20is%20that%20the%20fat%20runs%20off%20the%20meat%20into%20the%20pan,%20and%20can%20be%20strained%20off%20so%20you%20can%20just%20serve%20the%20juice%20and%20spare%20an%20artery%20or%20two%20as%20well.%3C/p%3E%3Cp%3ELamb%20has%20a%20reputation%20for%20being%20a%20bit%20fatty,%20especially%20shoulder,%20and%20you%20can%20see%20why%20here.%3C/p%3E%3Cp%3EServed%20this%20with%20mash%20from%20the%20night%20before%20(I'm%20getting%20lazier%20by%20the%20minute!)%20and%20runner%20beans%20from%20the%20garden,%20which%20never%20seem%20to%20run%20out%20-%20thank%20god%20:-)%20The%20fennel%20worked%20quite%20well%20with%20the%20lamb,%20though%20the%20radishes%20were%20completely%20lost%20(one%20day%20I'll%20find%20something%20interesting%20to%20do%20with%20the%20things).%20Think%20I'll%20do%20this%20again,%20but%20next%20time%20I'm%20going%20to%20slice%20up%20some%20lemons%20to%20go%20with%20the%20fennel%20and%20not%20bother%20about%20the%20rose%20wine%20or%20the%20radishes.%3C/p%3E%3Cp%3EThe%20finished%20dish,%20served%20with%20a%20sauce%20made%20from%20the%20vegetables%20and%20ricotta,%20just%20to%20try%20...%3C/p%3E%3Cp%3E...%20and%20a%20fab%20nectarine%20cheesecake%20B%20made%20for%20dessert.%3C/p%3E%3Cp%3EThe%20leftover%20meat%20has%20a%20lovely%20soft%20flavour%20of%20anise%20still,%20which%20has%20already%20gone%20into%20some%20pittas%20for%20lunches%20and%20is%20very%20soon%20going%20to%20make%20a%20dry%20risotto%20type%20dish%20I%20do%20with%20some%20peppers%20and%20onions%20as%20well.%20Loads%20of%20meat%20left%20though%20-%20I%20think%20we'll%20be%20eating%20lamb%20all%20week%20in%20Silverton!%3C/p%3E){kind=link}
