I was craving peanut butter and bacon. I had some bananas that were not "too" ripe just yet and had recently purchased Bobby Deen's new cookbook where he shared an Open Face Elvis Sandwich. My craving for that salty, sweet, creamy, and crunchy mouth comfort was about to be fulfilled, all without killing my diet!
I have faithfully been tracking my nutrition since the beginning of the year as well as tracking my activity. While my activity hasn't been high due to my knee problem, I hope it will be getting better within the next few weeks! I've been home recovering from a new procedure done on the knee called Subchrondoplasty so being home when food is readily available can at times be challenging. I admit I easily ate 10 Hershey Hugs one afternoon recently, and could have eaten more but forced myself to stop. The secret to not doing that is to first of all, not have it in your house, however if you must, then the next best solution (if you must have chocolate stash) is to not even have one to begin with if you know you can't stop at just one!
Right now I have a lot of time on my hands, but not a lot of ability to move. So, when these cravings hit me, I must find a way to do it and make it fit in my own personal nutrition plan and likes. I have to say I did this and not only was I satisfied with my breakfast, I was under 400 calories and that included my orange! While its true that loaded up sandwiches look absolutely delicious, its also true that sometimes less can be better. I think that probably that is the case with this sandwich. If you haven't tried this combination, I highly recommend it. The salty, smoky bacon contrast with the nutty peanut butter, creamy banana and sweet hit of broiled and crystallized brown sugar is a perfect solution to satisfaction and extremely comforting!
Bobby Deen uses low-fat peanut butter in his recipe, I do not. If you were to open my fridge, you would see that I do not buy much that is low-fat or no-fat unless it's yogurt and sometimes cream cheese. I don't like the taste of low-fat condiments in any way whatsoever, the biggest exception being cheese. I don't mind low-fat cheeses. Because of this, I make sure to measure what I do use so I can keep control of it. I used Truvia Brown Sugar blend in place of brown sugar and Bobby's recipe calls for regular sugar and went with light bread so I could have two slices rather than regular bread and only one. For the pre-cooked bacon I used Oscar Meyer thick cut. I felt like I was eating more and paying less for it calorie and nutrition wise by making my sandwich this way!

Open-Face Elvis Sandwich

A breakfast to fill your senses with all that comforts! Salty bacon, crunchy peanut butter, creamy bananas, and sweet brown sugar all for Weight Watcher 9 points plus!
Ingredients
- 2 slices light whole wheat bread (2 slices = approximately 90 calories)
- 1/2 medium banana, sliced
- 1 tablespoon crunchy peanut butter
- 2 slices fully cooked thick cut bacon (like Oscar Meyer)
- 1 teaspoon Truvia Brown Sugar Blend
Instructions
Place oven rack in center of oven and turn oven to broil on high.
Spread 1/2 tablespoon peanut butter on 1 slice of bread. Repeat with other slice. Evenly distribute banana over both slices.
Microwave bacon 15 seconds. Cut into smaller pieces and place 1 slice bacon over each slice of bread. Sprinkle each slice of bread with 1/2 teaspoon sugar.
Broil 2-3 minutes or until bread begins to toast and brown sugar begins to bubble. Do not leave unattended while cooking.
Yield: 1 serving
