This easy-to-make sweet Onion Jam is great topped on roasted meats and poultry, grilled salmon and even grilled cheese.

Lately, when I arrive home from work I can find my step son in the kitchen hovering over the stove, the smells of garlic or onions caramelizing. It doesn’t even matter if I am hungry or not, the smells are so enticing.

He is becoming rather swift in the kitchen lately. His love of caramelized onions is what prompted me to create a jam that can be used throughout the week. Well, that’s the intention anyway. It appears we can’t keep it long enough to even jar it these day.

However I did manage to jar it long enough for a photo shoot.

⅓ cup avocado oil 1 large onion (about 1 pound), chopped approximately (1 to 2 cups chopped) 2 large shallots,chopped 1 clove garlic, minced 1 small jalapeno (about 2 Tablespoons), seeded and chopped ⅛ cup brandy 1 Tablespoon balsamic vinegar 1 teaspoon sugar ½ teaspoon Sea Salt with truffles

Heat oil in a skillet over medium heat. Add the onions, shallots, and garlic stirring occasionally, until translucent, about 15 minutes. Add jalapeno, vinegar, sugar, and brandy to the onions and continue to cook uncovered until the onions are softened and caramelized, about 30 minutes. Season with salt. Let jam cool completely and store in a jar. 3.2.2925
