- Lightly brown onions in fat - remove onions and add flour and blend.
- Add water or stock gradually to flour mixture - stir constantly with wire whip.
- Add salt, pepper and brown onions.
- Cook until smoot and thickened - internal tempurature must reach 165 F for 15 seconds.
- Hold at 140 F until service.
