%20slow%20to%20reciprocate.%3C/p%3E%3Cp%3ENonetheless,%20those%205%20weeks%20were%20some%20of%20my%20very%20favorite%20weeks,%20for%20many%20reasons.%20Well,%20the%20obvious%20%E2%80%93%20meeting%20the%20person%20I%20hope%20will%20put%20up%20with%20me%20until%20the%20end%20of%20time.%20And%20making%20wonderful%20friends,%20even%20though%20we%20only%20keep%20in%20touch%20with%20less%20than%20a%20handful%20of%20them.%20Where%20else%20can%20you%20buy%20a%20decent%20$3%20bottle%20of%20wine?%20When%20you%E2%80%99re%20downing%20a%20bottle%20a%20night,%20that%E2%80%99s%20more%20than%20economical%20%20.%3C/p%3E%3Cp%3EAnd%20oh%20my,%20the%20food.%20If%20I%20knew%20then%20I%E2%80%99d%20be%20sitting%20here%20today%20writing%20about%20Italian%20cuisine,%20I%20would%20have%20taken%20notes,%20I%20would%20have%20taken%20pictures,%20I%20would%20have%20done%20my%20research%20and%20made%20sure%20to%20try%20all%20those%20rustic%20Italian%20dishes,%20those%20dishes%20I%20see%20today%20and%20drool%20over,%20wishing%20I%E2%80%99d%20tasted%20%E2%80%9Cthe%20real%20thing%E2%80%9D%20in%202001.%20I%20would%20have%20brought%20back%20a%20lot%20of%20Caputo%2000%20flour.%3C/p%3E%3Cp%3EBut,%20alas,%20I%20didn%E2%80%99t.%20And%20instead,%20I%20ate%20a%20hella%20ton%20of%20gelato%20(I%20think%20I%20tried%20every%20single%20flavor%20at%20the%20shop%20outside%20of%20our%20school),%20Margherita%20pizza,%20and%20occasionally%20some%20pasta%20with%20some%20sauce%20and%20some%20bread.%20With%20a%20drizzle%20of%20that%20heavenly%20Italian%20olive%20oil%20that%20at%20the%20time,%20I%20simply%20called%20%E2%80%9Cdipping%20sauce%E2%80%9D.%20I%20don%E2%80%99t%20remember%20what%20type%20of%20wine%20I%20drank%20because%20all%20I%20cared%20about%20was%20the%20price%20and%20that,%20if%20I%20bought%20cheap%20wine,%20I%20could%20use%20the%20rest%20of%20my%20loot%20to%20buy%20pretty%20Italian%20clothes%20and%20leather%20jackets%20and%20oh%20yeah,%20Murano%20glass.%3C/p%3E%3Cp%3EI%20know%20for%20a%20fact%20that%20I%20did%20not%20have%20soup.%20Hell,%20it%20was%20so%20hot%20you%20practically%20had%20to%20wring%20out%20your%20clothes;%20you%20couldn%E2%80%99t%20have%20paid%20me%20to%20order%20soup.%20In%20actuality,%20I%E2%80%99d%20never%20even%20heard%20of%20%E2%80%9Cribollita%E2%80%9D%20until%20Heidi%20made%20it%20a%20few%20weeks%20ago.%20It%20sounded%20nice,%20rich,%20and%20%C3%BCber-hearty;%20it%20seemed%20like%20a%20great%20Sunday%20dish.%20And%20then%20I%20saw%20it%20again,%20in%20this%20month%E2%80%99s%20BA%20and,%20despite%20my%20general%20avoidance%20of%20vegetable%20soups,%20I%20knew%20at%20that%20point%20that%20I%20had%20to%20give%20it%20a%20try.%3C/p%3E%3Cp%3EI%20do%20not%20regret%20it%20one%20bit.%3C/p%3E%3Cp%3EUnlike%20any%20veggie%20soup%20I%E2%80%99ve%20ever%20had,%20this%20here%20is%20perfect%20for%20the%20(hopefully)%20last%20few%20weeks%20of%20winter.%20Packed%20with%20protein%20and%20carbs,%20it%E2%80%99s%20filling%20and%20thus%20completely%20appropriate%20as%20a%20vegetarian%20main%20dish.%20It%20makes%20plenty%20(probably%20more%20than%208%20servings%20if%20you%20use%20large%20bunches%20of%20greens,%20as%20I%20did)%20and%20like%20a%20fine%20Italian%20wine%20that%20I%20didn%E2%80%99t%20taste%20in%20Italy,%20it%20gets%20better%20with%20time,%20so%20you%20can%20eat%20it%20throughout%20the%20week%20and%20freeze%20what%E2%80%99s%20left%20for%20later.%3C/p%3E%3Cp%3ENeedless%20to%20say,%20I%E2%80%99ll%20be%20looking%20for%20this%20dish%20as%20we%20venture%20out%20to%20Tuscany%20next%20year%20in%20celebration%20of%20our%205-year%20anniversary.%20And%20this%20time,%20I%E2%80%99ll%20make%20sure%20to%20take%20pictures,%20drink%20wine%20that%20costs%20a%20little%20more%20than%20$3,%20and%20lay%20off%20the%20Murano%20glass.%20I%E2%80%99ll%20be%20damned%20if%20I%E2%80%99m%20going%20to%20stay%20away%20from%20the%20gelato,%20however.%3C/p%3E%3Cp%3EOther%20Italian%20dishes:%3C/p%3E%3Cp%3ESweet%20Potato%20Gnocchi%3C/p%3E%3Cp%3EEggs%20in%20Purgatory%3C/p%3E%3Cp%3EShrimp%20and%20Asparagus%20Risotto%20(it%E2%80%99s%20almost%20asparagus%20time!)%3C/p%3E%3Cp%3ETuscan%20Ribollita%3C/p%3E%3Cp%3EInspired%20by%20101%20Cookbooks;%20adapted%20from%20Bon%20Appetit,%20March%202010%20&%20101%20Cookbooks%3C/p%3E%3Cp%3Ethis%20recipe%20is%20highly%20adaptable.%20use%20any%20beans%20you%20want,%20and%20any%20quantity.%20mix%20it%20up%20with%20different%20greens;%20the%20kale%20is%20a%20staple%20of%20ribollita%20but%20if%20you%20don%E2%80%99t%20like%20it,%20substitute%20chard,%20cabbage,%20whatever.%20i%20enjoy%20the%20potatoes,%20but%20feel%20free%20to%20leave%20them%20out.%20and%20the%20pesto,%20i%20added%20for%20extra%20flavor,%20but%20it%E2%80%99s%20just%20fine%20without%20it.%20definitely%20keep%20the%20zest%20%E2%80%93%20it%20brightens%20this%20rich%20soup%20up,%20just%20a%20bit.%3C/p%3E%3Cp%3Ealso,%20this%20is%20a%20great%20time%20to%20stock%20up%20on%20cooked%20white%20beans.%20I%20quadrupled%20the%20beans%20and%20froze%20the%20rest%20%E2%80%93%20they%E2%80%99ll%20las
