%3C/p%3E%3Cp%3EBy%20sheer%20coincidence%20we%20had%20planned%20to%20go%20to%20Momofuku%20Noodle%20Bar%20as%20part%20of%20a%20delayed%20celebration%20for%20Michael%E2%80%99s%20birthday%20(a%20departure%20from%20our%20usual%20trip%20to%20Keen%E2%80%99s,%20but%20one%20he%20requested)%20and%20it%20ended%20up%20being%20just%20what%20the%20two%20of%20us%20needed.%20We%20were%20there%20right%20as%20it%20opened,%20got%20two%20stools%20right%20away,%20and%20proceeded%20to%20demolish%20our%20bowls%20of%20ginger%20scallion%20%20noodles%20(me)%20and%20Momofuku%20ramen%20(him).%20I%20can%E2%80%99t%20honestly%20say%20what%20took%20us%20so%20long%20to%20finally%20come%20to%20this%20restaurant%20given%20how%20much%20we%20rely%20on%20the%20Momofuku%20cookbook%20for%20interesting%20meals%20at%20home,%20but%20nothing%20proved%20the%20adage%20%E2%80%9Cbetter%20late%20than%20never%E2%80%9D%20like%20our%20lunch%20on%20Saturday.%3C/p%3E%3Cp%3EMichael%20going%20to%20town%20on%20some%20ramen.%3C/p%3E%3Cp%3EWhat%20was%20so%20remarkable%20to%20me%20was%20how%20familiar%20everything%20tasted%20because%20it%20was%20nearly%20identical%20to%20food%20I%20had%20made%20in%20my%20own%20kitchen.%20A%20common%20criticism%20about%20restaurant-based%20cookbooks%20is%20that%20so%20few%20of%20them%20are%20effective%20in%20translating%20professional%20recipes%20and%20procedures%20for%20the%20home%20cook%20and%20home%20kitchen,%20but%20Momofuku,%20along%20with%20other%20perennial%20favorite%20The%20Barcelona%20Wine%20Bar%20Cookbook,%20successfully%20navigates%20this%20task.%20The%20latter%20book%20helped%20me%20fulfill%20my%20craving%20for%20interesting%20and%20delicious%20Spanish%20tapas%20when%20going%20to%20the%20restaurants%20was%20not%20nearly%20as%20convenient,%20and%20now%20I%20know%20that%20Momofuku%20will%20be%20able%20to%20accurately%20sate%20any%20cravings%20for%20some%20David%20Chang-style%20food%20when%20going%20to%20the%20real%20thing%20on%20a%20whim%20may%20not%20be%20possible.%3C/p%3E%3Cp%3EPORK%20BUNS.%20I%20am%20going%20to%20have%20to%20break%20down%20and%20make%20a%20huge%20batch%20of%20the%20buns%20the%20next%20time%20we%20have%20a%20party.%3C/p%3E%3Cp%3EOur%20meal%20also%20got%20me%20very%20excited%20to%20try%20some%20of%20the%20other%20recipes%20that%20had%20intrigued%20me%20in%20the%20book%20but%20I%20had%20otherwise%20resisted%20because%20I%20wasn%E2%80%99t%20sure%20how%20they%20would%20turn%20out%20or%20if%20they%20might%20be%20too%20complicated.%20At%20first%20I%20was%20a%20bit%20nervous%20to%20have%20the%20pickled%20Napa%20cabbage%20because%20while%20I%20like%20cabbage,%20I%20am%20also%20very%20particular%20in%20how%20it%E2%80%99s%20prepared.%20Turns%20out%20Chang%E2%80%99s%20simple%20vinegar%20pickling%20preparation%20is%20perfect%20in%20wilting%20the%20cabbage%20just%20enough%20to%20still%20retain%20just%20enough%20bite%20to%20be%20pleasing%20in%20texture.%20The%20pickled%20shiitake%20mushrooms%20were%20also%20a%20nice%20surprise%20(quite%20flavorful%20without%20being%20mushy),%20and%20the%20next%20time%20we%20deploy%20some%20dried%20guys%20for%20some%20ramen%20broth%20we%20will%20then%20save%20them%20to%20pickle%20them.%20Probably%20the%20most%20exciting%20element,%20though,%20was%20the%20slow-poached%20egg:%20it%20requires%20a%20lot%20of%20fussing%20over%20the%20heat%20levels%20to%20keep%20the%20right%20temperature,%20but%20the%20result%20is%20so%20damn%20delicious%20that%20once%20the%20weather%20starts%20getting%20cool%20enough%20to%20justify%20poaching%20eggs%20for%2040%20minutes,%20I%E2%80%99m%20going%20to%20have%20to%20give%20this%20a%20try%20at%20home.%20And%20then%20there%20were%20the%20pork%20buns%E2%80%93as%20much%20as%20I%20dislike%20the%20idea%20of%20having%20to%20figure%20out%20how%20to%20freeze%20a%20whole%20bunch%20of%20buns%20for%20pork%20buns,%20I%20will%20do%20it%20all%20the%20same%20in%20the%20name%20of%20how%20extraordinary%20the%20ones%20we%20had%20in%20the%20restaurant%20were%20because%20there%E2%80%99s%20no%20way%20I%20can%E2%80%99t%20not%20have%20them%20again%20in%20the%20near%20future.%3C/p%3E%3Cp%3EIn%20the%20meantime,%20I%E2%80%99m%20going%20to%20implore%20you%20to%20try%20Momofuku%E2%80%98s%20tomato-tofu%20salad%20because%20of%20all%20of%20the%20recipes%20in%20the%20book,%20it%E2%80%99s%20both%20quite%20simple%20but%20also%20designed%20to%20be%20adaptable.%20(It%E2%80%99s%20also%20the%20perfect%20time%20of%20year%20to%20enjoy%20it.)%20His%20original%20recipe%20calls%20for%20a%20fine%20chiffonade%20of%20shiso%20leaves,%20but%20those%20are%20typically%20not%20readily%20available%20near%20me%20so%20we%E2%80%99ll%20either%20use%20regular%20or%20opal%20basil.%20I%E2%80%99ve%20also%20experimented%20with%20tofu%20textures%20depending%20on%20what%20Fairway%20would%20have%20in%20stock,%20and%20while%20silken%20is%20by%20far%20the%20most%20pleasing%20texture%20a%20firm-textured%20tofu%20will%20also%20work%20in%20a%20pinch.%20Sometimes%20I%E2%80%99ll%20skin%20some%20of%20the%20tomatoes,%20but%20sometimes
