  • 2 med cucumbers, peeled
  • 1 x and cut into 1/4-inch slices
  • 2 x Large eggs, beaten
  • 1 1/2 c. fine dry breadcrumbs
  • 1 x vegetable oil

  1. Dip cucumber slices in egg, dredge in breadcrumbs. Fry cucumber slices in warm oil (375F.) in a skillet till browned, turning once.
  2. Drain well on paper towels.
  3. Serving Suggestions: Oklahoma-Style Fried Cucumbers may be served with any of the following: Dill Sauce, Horseradish Sauce, Mustard Dip Sauce, or possibly any lowfat sour cream sauce.
