Рецепт Oats & Wholewheat Pancakes
I felt odd clicking the publish button. As my last post was way too back in time. A big no in the blogging arena. The guilt that I had abandoned my blog was way too much than I could take. Life moves on bringing with it new challenges and changes. You have to make way for those and that means pushing certain things aside for some time. I have started working from home. Between raising the kids, doing household chores and working, I found some time to post a recipe, requested by my friends when I posted a photo of it, on Facebook.
I had not known fluffy American style pancakes before coming to Qatar. What we referred to as pancakes back in Sri Lanka has actually been crepes, a batter of white flour;milk and eggs. I had a friend in Qatar who used to send pancakes made out of boxed mixes you get easily here in the Middle East. They are so fluffy,light and topped with butter melting on top and syrup trickling from sides. Needless to say I was hooked. I started making my own from scratch and the kids devoured it.
Later as I became more health conscious, I tweaked the recipe to add more wholesome ingredients. Oats and Wholewheat flour replaced All-Purpose Flour. Honey instead of syrup. It didn't disappoint and came out well than anticipated. Kids didn't mind the changes and for me,that's the sign for a keeper. Paired with bananas, it is a favorite among us now.
Oats and Wholewheat Pancakes
Makes 4 small pancakes
- 1/2 cup wholegrain oats,powdered
- 1/2 cup wholewheat flour
- 1 tsp baking powder
- pinch of salt
- 1 egg, separated
- 1 tbsp raw sugar
- 1 cup milk of your choice
- 1 tbsp neutral oil or melted butter
- Honey and banana slices to serve
Method:
Mix powdered oats,wholewheat flour,baking powder and salt in a bowl and keep it aside.
In a separate bowl, beat the egg yolk, sugar and add the milk and oil or melted butter and beat till well incorporated.
Add the wet mixture to dry mix and stir.
Beat the egg white till peaks form and slowly mix in to the batter with a spatula.
Heat some butter or oil in a pan, drop couple of spoonfuls of batter and cook on both sides.
Serve warm with a drizzle of honey and banana or any other fruit of your choice.
