Oatmeal Chocolate Chip Pancakes

Serves: 4

1 Tbls

In a large bowl combine flour, ground oats, brown sugar, baking powder, baking soda, salt, and cinnamon.

In a small bowl whisk together egg, buttermilk, vanilla, and melted butter.

Add buttermilk mixture to the flour mixture, and mix until just combined. Fold in chocolate chips.

Heat a griddle or a large skillet over medium heat. Spray pan with non-stick spray. Scoop about ¼ cup of batter onto the hot surface. Cook for about 2 minutes, until the edges are set. Flip and cook for an additional 1-2 minutes.

Serve immediately with additional I Can’t Believe It’s Not Butter and maple syrup.
