Oatmeal Chocolate Chip Granola Bars
One thing I hope that I can accomplish by publishing so many recipes is to get you to think outside of the ordinary.
For these Oatmeal Chocolate Chip Granola Bars, I experimented with flours, using less sugar, and substituting some of the butter with Greek Yogurt.
It really is the only way I can have my sweets and feel less guilty about it. I am sure my thighs are happy too.
Oatmeal Chocolate Chip Granola Bars

Ingredients
- ½ cup unsalted butter, softened
- 6 ounces Vanilla Flavored Greek Yogurt (Like Chobani)
- ½ cup granulated sugar
- ½ cup golden brown sugar
- 1 teaspoon vanilla bean paste
- 1 egg
- ½ cup oat flour
- 1 cup all-purpose flour
- ¾ cup oats
- ½ cup chocolate chips
Directions
Preheat the oven to 375 degrees F,
Line an 8 X 8 X 3-inch baking pan with parchment, or spray with non-stick spray.
In a medium-sized mixing bowl, combine the butter and yogurt with the sugars, and vanilla. Then gently blend in the egg.
Mix in the flours, followed by the oats and chocolate chips.
Pour the batter into the prepared pan, and smooth the top with a flat-bottomed spatula sprayed with non-stick spray.
Bake in the preheated oven until it’s set and is golden brown, about 50 minutes.
Let it rest for at least 1 hour before cutting.

I love oatmeal in cookies and bars only. I can’t stand to eat regular oatmeal. i tried. i really tried.
And I am a sucker for the sweetness in almost anything. These will help curb that sweetness and is a great on the go snack too.
