%3C/p%3E%3Cp%3EYou%20may%20have%20already%20guessed%20what%20my%20necessity%20was!%20Yes,%20my%20basket%20full%20of%209%20over-ripe%20bananas,%20that%20we%20weren't%20able%20to%20finish%20as%20everyone%20at%20home%20was%20down%20with%20the%20flu%20:-P%3C/p%3E%3Cp%3EI%20still%20have%206%20more%20to%20finish,%20but%20then%20lets%20get%20to%20this%20one%20shall%20we?%3C/p%3E%3Cp%3ETwo%20down%20with%20these%20pancakes%20;-)%3C/p%3E%3Cp%3ESo%20last%20weekend%20after%20I%20had%20posted%20on%20my%20facebook%20page%20for%20suggestions%20as%20to%20how%20to%20use%20these%20beauties,%20many%20suggested%20to%20make%20'banana%20pancakes'.%20Now,%20I%20had%20already%20made%20some%20gorgeous%20Buttermilk%20Pancakes%20the%20previous%20week%20and%20had%20no%20plans%20on%20making%20some%20again.%20But%20then%20remember%20my%20'necessity'%20?%20;-)%3C/p%3E%3Cp%3EI%20was%20so%20very%20glad%20when%20I%20found%20a%20unique%20and%20healthy%20recipe%20for%20Oatmeal%20Banana%20Pancakes%20topped%20with%20Chocolate%20chips,%20and%20its%20so%20easy%20to%20make,%20all%20you%20need%20is%20a%20blender%20or%20mixer%20grinder,%20and%20of%20course%20the%20ingredients%20:-)%20These%20pancakes%20require%20no%20flour,%20no%20sugar%20,%20Only%20'Oats%20and%20Bananas'%20and%20is%20totally%20healthy%20,%20except%20for%20the%20guilty%20pleasure%20of%20some%20chocolate%20chips!!%3C/p%3E%3Cp%3EAnother%20thing%20that%20was%20occupying%20space%20in%20my%20fridge%20were%205-6%20lovely%20large%20strawberries,%20and%20I%20decided%20instead%20of%20topping%20my%20pancakes%20with%20honey%20or%20other%20sugary%20syrups,%20I%20would%20make%20a%20yummy%20Strawberry%20sauce%20or%20compote%20and%20trust%20me,%20it%20was%20the%20best%20decision%20ever%20made...period!!%20It%20turned%20out%20to%20be%20the%20perfect%20pairing%20for%20these%20pancakes%20with%20all%20its%20fruity%20goodness!%3C/p%3E%3Cp%3EThis%20recipe%20yielded%20about%205-6%20pancakes,%20quite%20enough%20for%20the%203%20of%20us.%20Double%20the%20amount%20if%20you%20want%20more.%3C/p%3E%3Cp%3EOatmeal,%20Banana%20n%20Chocolate%20chip%20Pancakes%20Recipe%3C/p%3E%3Cp%3ERecipe%20source%20:%20Adapted%20from%20Tasty%20Kitchen%20Blog%3C/p%3E%3Cp%3EYou'll%20need%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20In%20a%20mixer%20grinder%20or%20blender,%20add%20the%20banana%20,%20milk%20and%20vanilla%20extract%20and%20blend%20until%20smooth.%3C/p%3E%3Cp%3E2.%20Add%20the%20oats,%20baking%20powder%20and%20salt%20and%20again%20blend%20until%20the%20oats%20is%20fully%20grinded%20and%20a%20smooth%20batter%20is%20obtained.%20Set%20aside%20for%20few%20minutes%20for%20batter%20to%20thicken.%3C/p%3E%3Cp%3E3.%20Heat%20a%20non-stick%20tawa/pan%20on%20medium%20heat%20with%20lightly%20coated%20oil%20or%20butter%20(i%20use%20spray%20on%20canola%20oil)%20and%20pour%20about%201/4%20cup%20measure%20of%20the%20batter%20and%20spread%20it%20lightly.%3C/p%3E%3Cp%3E4.%20Place%204-5%20chcolate%20chips%20on%20top%20of%20the%20pancake%20and%20cook%20until%20you%20see%20bubbles.%20Then%20flip%20over%20and%20cook%20until%20golden%20brown%20on%20the%20bottom%20(about%202%20mins%20each%20side)%3C/p%3E%3Cp%3E[%20You%20may%20wipe%20the%20pan%20each%20time%20before%20making%20next%20set%20of%20pancakes%20,%20as%20the%20chocolate%20would%20have%20melted%20and%20may%20be%20present%20on%20the%20pan%20surface%20]%3C/p%3E%3Cp%3EStrawberry%20Compote%20/%20Strawberry%20Sauce%20Recipe%3C/p%3E%3Cp%3ERecipe%20:%20My%20own%20version%3C/p%3E%3Cp%3EYou'll%20need%3C/p%3E%3Cp%3ELarge%20ripe%20Strawberries%20-%205-6%3C/p%3E%3Cp%3EWater%20-%202%20tblsp%3C/p%3E%3Cp%3ESugar%20-%201%20tsp%3C/p%3E%3Cp%3EVanilla%20extract%20-%201/2%20tsp%20(optional)%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Wash%20well%20and%20chop%20the%20strawberries%20into%20small%20chunks%20and%20add%20it%20to%20a%20saucepan%20along%20with%20water%20and%20sugar%20and%20bring%20it%20to%20a%20boil%20over%20medium%20heat.%20Keep%20stirring%20constantly.%3C/p%3E%3Cp%3E2.%20Once%20the%20sauce%20starts%20bubbling%20and%20thickening%20slightly%20add%20the%20vanilla%20extract%20and%20again%20stir%20for%20a%20minute%20and%20take%20it%20off%20the%20heat.%3C/p%3E%3Cp%3E3.%20Let%20it%20cool%20completely%20before%20using!%3C/p%3E%3Cp%3EThe%20Pancakes%20were%20really%20soft%20and%20the%20bananas%20added%20a%20lot%20of%20flavor%20and%20enough%20sweetness%20and%20the%20Oatmeal%20obviously%20added%20a%20lot%20of%20fiber%20and%20goodness.%20The%20chocolate%20chips%20obviously%20took%20them%20to%20a%20higher%20level...hehe!%20I%20made%202%20pancakes%20without%20any%20chocolate%20chips%20and%20they%20tasted%20great%20too.%3C/p%3E%3Cp%3ESo%20shall%20we%20dig%20in...?%20Slice%20them%20up%20,%20like%20you%20would%20slice%20a%20cake%20:-)%20Look%20how%20the%20chocolate%20chips%20have%20melted%20so%20nicely...%3C/p%3E%3Cp%3EAnd%20pour%20some%20of%20that%20delicious%20Strawberry%20sauce%20over%20it...mmmmmm!!%3C/p%3E%3Cp%3EOverall%20experience%20:%20Almost%20like%20having%20a%20Banana%20Split%20for%20breakfast!!%20Trust
