My dad wasn’t a cook. Not even a grill guy. Mom and I used to joke that he could strip down a toaster and rebuild it to have it working better than ever, but was clueless when it came to popping a couple slices of bread into it, and toasting them up. When he retired, many years ago, he actually thought my mom would rise with him at 5 am to make him coffee, since he couldn’t grab a cup of joe on his way to work now. She made it abundantly clear that wasn’t ever going to happen. He suffered searing headaches from caffeine withdrawal, and still he wouldn’t make his own coffee. Some might say he was into the traditional roles of a husband and wife in marriage, and I’m sure there’s truth to that, although truthfully my mom enjoyed cooking for him and he genuinely loved her cooking. To this day, I can’t remember a single thing he ever made when I was growing up.

Except for popcorn.

He poured all of his dormant interest in preparing food into this simple snack. He researched popcorn makers in Consumer Reports, and every year or so purchased a new one. I sure he was the first in his circle of friends to have an air popper. He likewise tested every popcorn kernel available in any store in a 10 mile radius of our house, searching for the best kernel that would pop up into a fluffy morsel with just the right crunch. We graduated over the years from Jiffy Pop, which was more fun to watch popping than anything else we ever tried, to Orville Reddenbacher (his all-time favorite).

When my husband and I decided to try to cut back on sugar in January, I started making this treat. I purchased this nifty popcorn popper (affiliate link) that makes it so easy in an after Christmas sale that was a real steal.

And I too researched all kinds of kernels, finding that Bob’s Red Mill kernels popped up to almost twice the size of other kernels (affiliate link).

Dad would be proud. But the real secret to this popcorn, I think, is the nutritional yeast. It gives the popcorn a cheesy flavor similar to Doritos but with tons of healthy nutrients. And it makes this popcorn addictive. Consider yourself warned.

Air pop the corn kernels - I pop mine in the microwave oven with the pictured glass popcorn popper. Spill the popcorn into a large bowl. Drizzle with olive oil enough to lightly coat. It's best to start with a couple tablespoons and add more as desired. Sprinkle with the seasoned salt to your own tastes - again it's best to start with a smaller amount as it's easy to add more if you want. Generously sprinkle with nutritional yeast - this is magic stuff that really makes this popcorn addictive. Toss with your hands to coat the popcorn and serve. 3.5.3208
