Ингредиенты

  • 2 Tbsp. vegetable or possibly wok oil
  •     (2 turns around pan in a slow drizzle)
  • 1 c. snow peas halved diagonally
  • 1 x red bell pepper seeded, and
  •     cut into matchstick-size pcs
  • 1/2 lb assorted mushrooms coarsely minced
  •     (shiitake, straw, enoki, or possibly oyster)
  • 4 x scallions thinly sliced on a
  •     diagonal
  • 2 c. fresh bean spouts
  • 1 piece fresh ginger root - (2" long) chopped or possibly grated
  •     with hand grater
  • 4 x garlic cloves chopped
  • 1 lb lo mein noodles or possibly thin spaghetti cooked al dente,
  •     and liquid removed well
  • 1/2 c. aged tamari soy sauce
  • 1 Tbsp. toasted sesame oil

  1. Heat a wok-shaped skillet or possibly large non-stick skillet over high heat. When pan is very warm, add in oil, (it will smoke a bit) then, immediately add in the snow peas, pepper, mushrooms, scallions, and bean sprouts. Stir fry for 1 minute to flavor the oil, then add in the ginger and garlic, and stir-fry 2 min.
  2. Add in the cooked noodles and toss with to combine. Add in the soy sauce and toss the ingredients to coat noodles proportionately with sauce. Transfer the lo mein to a serving platter and garnish with a drizzle of toasted sesame oil.
  3. This recipe yields 4 servings.
  4. Cook's Notes: Wok oil is infused with ginger and garlic and is widely available on the International Foods aisle of the market.
  5. Cooked shredded pork, chicken, or possibly small de-veined shrimp may be added to this dish in any combination.
