- 4 stalks celery, minced
- 1 med. red apple, unpared and coarsely minced
- 1/2 med. onion, chopped
- 2 T green pepper, minced
- 4 ounce blue cheese, crumbled
- Splash of lemon juice (about 1/2 teaspoon)
- Extra mayonnaise, if necessary

- Prepare the day before you want to serve this; it takes time to let the flavors mingle. Mix all ingredients together and refrigerate overnight. If salad seems too dry, add in extra mayonnaise till it is the consistency you like. This keeps well in the refrigerator for days. Serves 6 to 8 generously.
