  • 9 " graham cracker crust - see below for homemade
  • 8 oz. cream cheese, room temp
  • 1 cup canned pumpkin puree
  • 1/2 cup sugar
  • 1/2 tsp. pumpkin pie spice
  • 2 1/2 cups Cool Whip, thawed (8 oz.)
  • no bake graham cracker crust:
  • 1 1/2 cups graham cracker crumbs
  • 6 tbs. unsalted butter
  • 2 tbs. sugar
  • optional: 1/4 cup mini chocolate chips

  1. no bake: combine crust ingredients in a 9 inch pie pan, press into the sides and bottom of the pan, refrigerate.
  2. pie filling;
  3. Combine the first 4 ingredients in a mixing bowl. Blend with a hand mixer until smooth.
  4. Fold in the Cool Whip.
  5. Pour into pie shell.
  6. Refrigerate 4-6 hours.
  7. Use remaining Cool Whip for topping.
