This is a very easy recipe that you can adapt for any fruit or berries you may have on hand.

- Preheat oven to 350 degrees
- Combine the first 3 ingredients, blend well, then press into the bottom of a 9-inch spring form pan, pushing the crumb mixture about 1/2 inch up the sides of the pan.
- Bake for about 10 minutes, remove from oven and set aside.
- Turn off the oven, as you don't need it now.
- Whip the heavy cream, but keep it handy.
- Dissolve (bloom) the gelatin in the water for about 5 minutes. Heat until the gelatin is clear.
- In the meantime, put the cream cheese, sugar and vanilla extract into the bowl of a stand mixer. Using the paddle attachment, blend on medium, just to combine.
- Turn machine off, pour in the gelatin, then turn the machine back on, again, mixing to combine.
- By hand, fold in the whipped cream and berries. and quickly pour over the crust.
- Tap pan on hard surface a couple of times to level, then refrigerate until set.
- Top with berry sauce and additional whipped cream, and garnish with mint sprig.
