Are you ready for the holiday baking season? It is pretty much upon us. I have to admit, I am not quite ready. This year has just gone by far too quickly, I want it to slow down a little! But today, I am here with a special treat for you. I have mentioned Katrina from In Katrina’s Kitchen before. She is one of my very dear friends in this blogging world. We were roommates at a conference earlier this year, and I was able to visit her when I was in Ohio a few weeks ago. So this post is kind of special to me today. In case you didn’t know Katrina came out with a cookbook (The Biscoff Cookie & Spread Cookbook)!!! She worked so hard on this book, and it is gorgeous and so full of great recipes.
I pre-ordered my copy of this book a few months ago, but then Katrina asked if her publisher could send me a copy for review. Obviously, my answer was yes. So now I have 2 copies, and I know one lucky friend who is getting one as a gift. Katrina has 2 sons, one of them has a severe peanut allergy. So she turned to Biscoff spread as a peanut butter alternative to her recipes, so that her whole family could eat them. In case you haven’t had Biscoff spread before, it is kind of like a gingerbread in a spread form. It is a little more mild than a gingerbread, but it has that same hint of spices in there. You will be eating it with a spoon, straight from the jar the first time you try it. And maybe every time after that. The stuff is so good, and addicting!
If you have ever visited In Katrina’s Kitchen you know just how darn creative she is. Well, this book is a perfect reflection of her and her blog. The pictures are gorgeous, the recipes are super creative, yet use every day ingredients and are easy enough for the novice baker. Everything from Biscoff cinnamon rolls, to cupcakes and cookies to waffles, pancakes, cheesecake, bread, muffins and more. I seriously can not say enough good things about this book. I want to make just about every recipe! My holiday baking tray is going to be covered in Biscoff everything this year!
No Bake Peanut Butter Bars are one of my all time favorite treats. So I was immediately drawn to the Biscoff version. It was the first recipe I tried, and it definitely lived up to my expectations. My 9 year old tried to hide the last one, so that he could have it to himself. So, if you are looking for a gift for your favorite baker this Christmas, definitely pick up a copy of this book! No Bake Biscoff Bars
Serves: 12 Prep time: 15 mins Total time: 15 mins No Bake Biscoff Bars are like a peanut butter cup but with the flavors of Biscoff. Quick, easy, and sure the please! Ingredients
- 1 cup butter 1 cup Creamy Biscoff Spread 2 tsp vanilla 2 cups Biscoff cookies, crushed 2 cups powdered sugar Topping
- 1¼ cup milk chocolate chips ¼ cup Creamy Biscoff Spread Instructions
Line a 9x9 inch baking dish with foil. You can use a 13x9 pan for thinner bars. In a sauce pan melt together butter and Biscoff Spread. Stirring constantly until smooth. Remove from the heat and stir in the vanilla, crushed Biscoff cookies and powdered sugar. Stir until well combined. Spread into the bottom of the prepared dish. In a microwave safe bowl melt together chocolate chips and Biscoff spread. Pour over bottom layer. Place in the fridge for about 20 minutes or until completely set. 3.2.2807
