Рецепт Nippattu
Nippattu is a deep fried, spicy rice flour snack delight of Bangalore. It is "chai time" crispy cracker, also prepared during festivals like Gokulashtami. Easy to prepare and can be enjoyed by all.
- 1 cup rice flour
- 1/4 cup maida
- 1 tbsp. red chilli powder
- 1 tbsp. coriander finely chopped
- few curry leaves, chopped
- 1/2 tsp. sesame seeds /white til
- pinch-hing
- 1/2 tsp ajwain
- 1 tbsp.hurikadle/puttani
- 10-12 peanuts coarsely powdered
- 2 tbsp.butter
- Salt to taste
- Oil to deep fry
- water to knead the dough
Method:
In a pan heat 2 tsp oil. In a separate pan, roast the rice flour, maida flour for 5 mins on medium flame. In a bowl, add all the ingredients and add little water, and mix. Next add the hot oil into this dough and mix to form a stiff dough. Keep it aside for 10 mins.
Next take small lime sized dough ball and flatten into thin round shape. You can use plastic or foil to flatten the dough.
Heat oil in a big kadai.
Carefully take the discs/ nippattu and deep fry it in the hot oil till golden and crisp on both the sides. Remove it on tissue paper. Once cool you can store in air tight container.
Enjoy these Nippattu with hot cup of tea or coffee.
You can prepare an extended chaat from this Nippattu by topping these with sweet and spicy chaat chutneys, onion,carrots, sev and peanuts.
