- Boil the new potatoes in lightly salted water till they are just cooked through (test by piercing with a fork). Drain and let cool water flow over them to speed cooling.
- When the potatoes are cold, slice each one in half. Then carefully cut a small slice from the end of each half so they will not tip over.
- Using a melon baller, carefully scoop out most of the potato flesh and throw away.
- Dress new potato c. with a small dollop of lowfat sour cream, add in a slice of lobster and a tiny spoon of caviar. Garnish with a sliver of chive and serve.
