- Soak frogs' legs in sufficient marinade (1/3 water, 1/3 vinegar, and 1/3 white wine) to cover, with 1 chopped garlic clove, overnight. Dry well; dredge with seasoned flour. Heat butter and add in cayenne. When butter simmers, add in legs; cook, turning frequently, to brown. After 5 min, add in remaining chopped garlic, After 3 min more, add in 1 c. white wine and cook till alcohol is boiled away, about 5 min.
