  • 2/3 cup Olive Oil
  • 2 1/2 cups spanish onions
  • 2 1/2 cups celery
  • 2 1/2 cups carrots
  • 2 1/2 tsp garlic powder
  • 1 3/4 gals vegetable stock
  • 3 qts tomatoes
  • 2 1/2 cups tomato paste
  • 1 1/4 tsps oregano leaves
  • 5 ech bay leaves
  • 1 1/4 tsps thyme leaves
  • 5 ech fresh basil leaves
  • 1 1/4 tsps salt
  • 1 1/3 tsps pepper
  • 2/3 cup sugar
  • 2 1/2 lbs fresh spinach
  • 1 qt navy beans

Инструкции

  1. Saute onion, celery, and carrots in olive oil.
  2. Add next 12 ingredients (everything except spinach, beans)
  3. Bring to a boil.
  4. Reduce heat and simmer for at least one hour until flavors are mingled.
  5. Add spinach & beans
  6. Turn soup a couple of times
  7. adjust seasonings if necessary
  8. pan-up
