Ingredients:

Coriander Leavess – 1 tblsp, finely chopped

Method:

1. Heat oil in a non-stick pan.

2. Fry the onion seeds, green chillies and curry leaves for 30 seconds.

3. Add the onions and saute until golden.

4. Add garlic paste and stir-fry for a minute or until the raw smell disappears.

5. Add tomatoes and mash lightly.

6. After a minute, add the mushrooms, coriander powder, turmeric powder, cumin powder, pepper powder and mix well.

7. Add salt and stir again.

8. Reduce flame to low-medium and cook until the mushrooms are tender and done.

9. Garnish with coriander leaves.

10. Serve as a side dish to roti, chapati, pulao or naan.
