- Preparation:
- Clean and slice the mushrooms.
- Finely chop the onion and green chili.
- Puree the tomatoes.
- Gather all the spices and other ingredients.
- Cooking:
- Heat 2 tablespoons of oil or ghee in a pan over medium heat.
- Add 1 teaspoon of cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until golden brown.
- Add 1 teaspoon of ginger-garlic paste and the chopped green chili. Sauté for a couple of minutes until the raw smell goes away.
- Making the Masala:
- Add the pureed tomatoes to the pan and cook until the oil separates from the masala.
- Add 1/2 teaspoon turmeric powder, 1 teaspoon red chili powder, 1 teaspoon coriander powder, and 1/2 teaspoon cumin powder. Mix well and cook for another 2-3 minutes.
- Cooking the Mushrooms:
- Add the sliced mushrooms to the masala. Stir well to coat the mushrooms with the masala.
- Add salt to taste and 1/2 cup of water. Mix well.
- Cover the pan and let it cook on medium heat for about 10-12 minutes, or until the mushrooms are tender and cooked through.
- Finishing Touches:
- If using fresh cream, add 1/4 cup of cream to the pan and mix well. Cook for another 2-3 minutes.
- Sprinkle 1/2 teaspoon of garam masala and mix well.
- Serving:
- Garnish with freshly chopped coriander leaves.
- Serve hot with rice, roti, or naan.
