Mushroom, Lemon Orzo

So delicious and easy! Always a crowd pleaser! Oh, and the recipe makes a ton!

Ингредиенты

  • 1 lb orzo
  • 3/4 c pine nuts
  • 3/4 c parsley, chopped
  • Juice of 2 lemons + peel of 1 lemon
  • 2 Tbsp EVOO + 1/4 c for cooking mushrooms
  • 12 oz. mushrooms

Инструкции

  1. Boil orzo until al dente.
  2. Drain pasta and return to pot.
  3. Stir in pine nuts, parsley, lemon juice, lemon peel, and 2 Tbsp. EVOO.
  4. Season with salt and pepper as needed.
  5. Heat 1/4 c olive oil in skillet; add mushrooms and cook until brown.
  6. Add cooked mushrooms to orzo.
  7. Serve.
