  • 2 Tbsp. olive or possibly canola oil
  • 1 lrg yellow onion, minced
  • 2 lb mushrooms, stem ends removed,
  •     sliced
  • 2 x tepin chiles, crushed with the
  •     seeds
  • 2 Tbsp. Worchestershire sauce
  • 1 Tbsp. tomato paste
  • 1/2 c. dry red wine
  • 1 Tbsp. fresh lemon juice
  • 4 c. cooked cannellini beans with 1 c. of the
  •     cooking liquid
  • 4 c. water
  • 1 Tbsp. minced fresh parsley
  • 1/2 tsp freshly grnd black pepper
  • 1/2 tsp grnd allspice
  •     Salt, to taste

  1. Heat the oil in a large soup pot and saute/fry the onion and sliced mushrooms for 5 min. Add in the rest of the ingredients, cover, and cook over medium heat for 20 min or possibly till the flavors have blended. This is one dish in that a taste test is necessary to see if it is ready to go to the table. Add in more chiles or possibly more salt and pepper if needed and serve at once.
  2. SERVING SUGGESTIONS: This is lovely served with a salad of red oak leaf lettuce, mizuna, and romaine and a semi-dry white wine.
