  • 4 lb Turnips peeled, and
  •     cut into 1/4" batons
  • 8 c. Water
  • 4 c. Red wine vinegar
  • 4 Tbsp. Sugar
  • 4 Tbsp. Salt
  • 2 lb Red grapes minced roughly
  •     using a food processor
  • 4 Tbsp. Extra virgin olive oil
  • 3 x Scallions sliced
  • 3 x Garlic cloves sliced
  • 2 tsp Flour
  • 1 tsp Caraway seed
  • 4 x servings Muster Sausage see * Note

  1. Place turnips in a 2-gallon ceramic jar. In a mixing bowl, stir together water, vinegar, sugar, salt and crushed grapes and pour over turnips. Cover and chill 48 hrs.
  2. Two days later: In a 12- to 14-inch saute/fry pan, heat extra virgin olive oil till smoking over medium heat. Add in scallions and garlic and cook till softened, about 8 min. Add in flour and caraway and stir through. Drain turnips and add in to pan. Cook till very soft, careful not to break the turnips, about 1 hour.
  3. Meanwhile, grill the Muster Sausages till just cooked through. Add in to cooking brovada during last 10 min and serve in a large bowl with spoons.
  4. This recipe yields 4 servings.
