I’ve been in the decorating mood lately even though I fractured my elbow. Yes, that’s right! That fall on my new bike I got for my birthday fractured my elbow, and well – the pain is excruciating! It’s been 2 1/2 weeks already, and still not much relief. The doc says no cast – keep it moving, but use common sense – don’t do anything where I’ll re-injure it. I’m hopeful by next week the pain will subside.

At any rate, I’ve been working on a project and had some cupcakes on hand, so thought I’d play around with them. Trying to think of Mother’s Day ideas ( in case you forgot, it’s May 11th), I found these all over on Pinterest. I fell in love with this idea – they’re so easy to create, and fun. Your children or grandchildren can make these to gift to their mom, or to serve as the dessert for Mother’s Day.

I especially like these as a bouquet of flowers using a bit of green licorice for the stem. They’re just about impossible to mess up. Each cupcake takes about 20-30 minutes to create, but oh, look how lovely they are! Who wouldn’t be thrilled to get these?

Make them for Mother’s Day, a bridal shower, or any type of function. You’ll have a blast creating these, but best of all, your children will too! It’s fun for the whole family – that’s what I love!!!

Mum Cupcake Bouquet

A simple yet beautiful cupcake bouquet to create for Mother's Day!

Ingredients:

12 cupcakes (use your favorite recipe or box mix)

icing of choice, any color

green licorice

Directions:

Cut approximately 40 miniature marshmallows in 1/2 on the diagonal, and set aside in a bowl.

Have sanding sugar or sprinkles in a container

Spread icing on the top of a cupcake. Do this one at a time, otherwise the icing will form a crust, making it difficult for marshmallows to adhere to cupcake.

Dip each cut 1/2 of marshmallow into the sanding sugar/sprinkles and starting at the outer edge, add the dipped marshmallows to the cupcake, sanding sugar facing inward.

After you finish lining the marshmallows on the outer edge in a full circle, add the next row in front of the previous circle. Continue adding the marshmallows - be sure to put them close together - until you've added all of them. You should have an empty spot in the middle.

Add a candy ball, Good & Plenty candy or Jelly Bean in the center.

You've now completed one cupcake.

Continue with the remaining cupcakes. When finished, arrange on a platter and using green licorice, lay next to base of cupcakes to resemble stems.
